For our six pack of newly discovered lifeforms, we ventured into the unknown with a few of our most inspiring international brewer friends and found all kinds of creepy-crawlies and curious organisms. Working with Nevel Artisan Ales was a lot of fun, and we think they make some of the best beers we’ve ever tasted. When their brewer Mattias came over from Nijmegen, together we concocted the masterplan to create a Zoetzuur Pilsner ? We started with the base of a regular Pilsner which we then kettle soured with Lactobacillus. After bottom fermentation we added sweet apricots and dry hops to get to both the sour and the sweet in our pilsner.
