This Session Saison is produced to encourage everyone to enjoy the little things in life. Slomo is a light, blond beer with delicate aromas emanating from the use of Czech Saaz hops. This is a brew that fits Slomo’s speed.
Slomo is like the embodiment of ‘YOLO’. He is the cult hero that inspired us for this summer breeze beer.
Fifteen years ago, after ‘seeing the light’, Slomo decided to sell his Ferrari and quit his career as a surgeon to do what truly makes him happy. Ever since he turned the wheel, you can find him roller-skating on San Diego Boulevard… preferably on one leg as slow as possible, floating across the boardwalk.
Our Slomo brew is what we consider a table Saison without extremes; instead it is a light, easy-going and refreshing beer. We accomplish that by using a Saison yeast strain that leads to a dry beer with a touch of spice. When it comes down to getting enough body this creates a bit of a challenge, given the high attenuation of a Saison and lighter malt bill. To solve this riddle, we add the lightest malts possible and use a lot of other grains besides barley (i.e., wheat, oats and rye).
As we solve one problem, another one occurs; bitterness can really stand out in a light and dry beer, but that isn’t the point for Slomo. To tame the bitterness we only use European hops at two different stages. In the kettle we use East Kent Goldings and Saaz hops, at the post-fermentation stage dry hopping consists of another round of Saaz. This results in a more grassy and herbal flavor. A palette our single legged-roller skating king would truly appreciate.
